Steak and Kale Frittata

1 Tbsp cooking fat (bacon grease, coconut oil, butter)

2 Cups frozen chopped kale, thawed

1/2 tsp onion powder

1 cup steak, cooked and chopped (or other leftover meat)

1/4 Cup Milk

1/2 tsp salt

1/4 tsp pepper

6 oz cheese (shredded cheddar, mozzarella, crumbled feta, etc.)

Preheat the oven to 375. Heat cooking fat in a cast iron skillet over medium heat. Add the kale and meat and sprinkle with the onion powder. Cook until heated through. While the kale and meat cook, whisk together the eggs, milk, salt and pepper. When the kale and meat mixture is ready, pour the egg mixture over it and top with the cheese. Transfer to the oven and bake 20 minutes or until the eggs are firm. Serve warm, or let cool and store in the refrigerator. Reheats well in the microwave, or use a toaster oven or air fryer for a crispier texture.


Oatmeal Packets

Ready for a quick, economical, healthy breakfast option?  You can make your own oatmeal packets that are ready to eat in 5 minutes! I keep these on hand for when I don’t have something prepped and I don’t want to resort to packaged cereal.  Here’s the recipe:

2/3 cup old fashioned oats

Smidge sea salt

1 tsp sweetener of choice (adjust to your tastes)

1 Tbsp chia seeds

1 Tbsp protein powder

Dash cinnamon

Place al ingredients in a Ziploc bag.  When ready to make it, put the mix in a heat-safe bowl and add 1 cup of boiling water. Let sit 5 minutes then stir and eat. You can also add some butter or coconut oil with the hot water for additional healthy fats and staying power.
